POTATO HERRING BAKE (MR. JANSSON’S TEMPTATION)

4–6 portions

 

Ingredients:

1 kg potatoes

1–2 onion

3 garlic gloves

200 g herring

1 teaspoon black pepper (ground)

½ teaspoon salt

4 dl cream

½ dl brine of the herring

 

Peel and cut the potatoes into thin slices (like French fries). Slice the onion, garlic and herring into thin slices. In a bowl, mix everything together, and add spices. Pour the mixture in a greased ovenproof pan.

 

Mix together cream and brine, and pour on the top of the potato and herring mixture.

Bake at 200°C for at least an hour, or until crisp and brown on top. For extra tasty result, after an hour cover with foil, lower the heat to 150 °C and bake for another 30 minutes.
